I'm looking for examples of specifications given to food vendors at fairs, especially County Fairs (e.g., use of containers that can be recycled locally, post-consumer recycled paper products, utensils that can be composted, methods to deal with pre-consumer food scraps, etc.) Our Sonoma County Fair hosts over 300,000 attendees in 14 days.
