Especially if you connect the upstream
wastes (including wastes to the atmosphere and waterways – what we
typically call pollution) to these eating habits you’ll get an astounding
differential in environmental impacts of those eating habits. I’m
currently using our Consumer Environmental Index (CEI) to do these calculations
on food groups (meat, dairy, grains, vegetables and fruits) for the average
consumer in Washington
state. This will show the differentials for the food groups per dollar spent
on the various food groups, as well as for the average spending per person.
