I suggest you look at Skandia hotels 
(http://www.skandia.com/en/sustainability/sustainabili
ty.shtml) which began an apparently very successful 
initiative based on the Natural Step principles some 
years ago(www.naturalstep.org).
Another source of information is CERES Green Hotel 
Initiative (http://www.ceres.org/ghi/overview.htm)
