[GRRN] Waste Audits of Medium - Large Restaurants

The Portland-metro region is working towards developing a commercial
collection and processing foodwaste system for the future. What
jurisdictions or private consultants have preformed waste audits on medium
to large restaurants? I have yet to find any - and I'm sure different types
of restaurants - Chinese food versus steakhouse versus fast-food, for
example - will generate vastly different types of material - in terms of
percentages of waxed cardboard to packaging to pre-consumer versus
post-consumer material, etc.
